These days, the foodie and restaurant world is abuzz with buzzwords. “Local,” “sustainable,” and “hand-crafted” get tossed around more than a good salad.
Well, it is one thing to say it and another thing to live it. So when, after 23 years of starting and running restaurants, my wife Amanda and I first started playing with the idea of Fork, we knew it would take a lot of effort to make these words mean something. And that’s what we’re trying to do, by making the ideas—the big ideas—behind these words not just marketing slogans, but at the core of how we spend our day.
It all starts with the food, of course. That’s why we’ve developed our “Loyal to Local” pledge, a commitment that has us sourcing many of our key ingredients from local Boise and Northwest farmers, ranchers, bakers, distillers, brewers, producers and cheese makers. The result is a menu that is as surprising as it is familiar.
Beyond the food, we’ve carried this approach to our beverage program and restaurant design as well. 75% of our beer, spirits and wine come from the great Northwest region and we’ve painstakingly restored and updated one of Boise’s oldest downtown landmarks into a comfortable, relaxed dining room. Local artisans used reclaimed Idaho barn wood or recycled materials to craft elements like our tables and glasses.
Barbacoa is a multi-dimensional concept that is more than just a restaurant. Designed by Robert and Martine Castoro in conjunction with Thompson Interiors (2005 National Award Winner for Hotel and Restaurant Design), it’s a museum, an art gallery, and a promise to all of your senses that they all in turn will be touched and stimulated.
Goldy’s Breakfast Bistro (“Goldy’s”) was opened in February 1999 in the heart of downtown Boise, ID. Goldy’s takes pride in its made to order breakfast using as many fresh local ingredients as possible to provide a variety of choices.
Choose from our standard combo meals that give you choices, choices, choices… We are known for our homemade Hollandaise and our unique entrees Spinach Frittata, Andalusia Eggs (Bon Appetite’s favorite (2002 Issue)) and always our scratch pancakes.

In an effort to make our entire process green, natural, and sustainable we use all natural, local, and whenever feasible, organic products. We produce little to no waste. We use Energy Star appliances and lights. We recycle our sunflower seed oil in cars. We’re just trying our best to make as little impact on your cholesterol and our planet as possible.
Our bison is local, fresh, natural, grass-fed and finished. Our beef is regional, fresh, natural, grass-fed, and grass and grain finished. Both are hand-seasoned and formed with Boise Fry Co’s secret recipes. Our vegan burgers are made with black bean and organic, fair-trade certified, and high protein quinoa. And our organic wholewheat potato buns are baked fresh every day.
For the first time in our lives, we did our homework. We studied fry preparation methods from the beginning of fries until present. We tested cooking methods from New York to Paris. We debated serving methods. We took naps. After months of labor, we developed a fry that is uniquely Idahoan, and most importantly tasty. So whether you call them frites, taters, fries, or chips we know you’ll enjoy the vegetable of our labor.
Here’s the method we developed: We obtain the finest and freshest potatoes available from M&M Heath Farms in Buhl, Idaho. We prepare each potato, with love, and follow a strict regiment to ensure each fry retains its quality and amazing flavor. All our potatoes are fried in natural GMO-free sunflower oil, and are unsalted so you get to choose from any of our homemade seasonings and dipping sauces. So, for example, you could dip your curly Yukon gold fry, spritzered with malt vinegar and sprinkled with smoked sea salt, in blueberry ketchup. Or dip an unsalted home-style sweet potato fry in chipotle aioli. We have as many variations as you have personalities – over 100,000 in fact.
